2006 CABERNET SAUVIGNON,
DIAMOND MOUNTAIN DISTRICT
VINEYARD

Josh Clark
Clark Vineyard Management
The Wallis vineyard is comprised of three main soil types: Aiken Loam, Boomer-Forward-Felta complex and the Forward-Kidd complex. These soils are classic well drained soils which make the vines work hard for moisture and nutrients. This is the typical soils that make Diamond Mountain District a world class growing environment for varietals selected.
A mix of rootstocks and clones were chosen to give the wine great complexity and structure and to express the uniqueness of this site. These soils coupled with an excellent vineyard orientation and design lend themselves to exceptionally long hang time and really leave the wine making team many options during harvest. With very accurate control of irrigation, canopy and crop levels we are able to maximize the potential of this vineyard sight.
In 1997 we planted about 13 acres of vineyards. The vineyard is planted in eight distinct blocks on a spacing of 4 X 7. We are in the heart of The Diamond Mountain District at an elevation 600 to 800 feet.
The varietal selections are Cabernet (five clones), Cab Franc, Merlot, and Petit Verdot. Our plan is to harvest this fruit each year and keep the best for The Wallis Family Estate Cabernet. Each year the percentages will slightly change but it will always be over 75 percent Cabernet.
The vineyard is immaculately farmed, and the fruit quality, and finished wine, is superior because of this attention to detail.

WINEMAKER, PHIL STEINSCHRIBER
Phil Steinschriber has been involved in the
beverage business since his teens. He
became Diamond Creek Vineyards
winemaker in 1991. “He produces the
Diamond Creek wines today after setting a
tone of softer wines in the 90’s and rounder
more complex wines in the 2000’s.” Phil
knows the Diamond Mountain District from
a very personal commitment to its terroir.
We like to think of it as sperroir, or a spiritual
connection to the area. Phil has
championed Diamond Creek’s success,
and we are very proud that he has made
our wine for vintages 2006 and 2007.

Phil’s description of the
2006 Wallis Family Estate Cabernet…
“is a rare find indeed.”
We hope you will agree.
WINEMAKERS TASTING NOTES
The 2006 Wallis Family Estate Diamond
Mountain District Cabernet Sauvignon “is a
rare find indeed.” Made from a blend of
the traditional Bordeaux varietals, it has
bold aromatic characters of black
currants, mouth filling plums, espresso and
toast topped off with vanilla bean ice
cream notes.
This wine has an opulent full bodied
character that lingers long after the wine is
swallowed. A wine to enjoy immediately or
to hold for the next 7 to 14 years.
HARVEST
The 2006 vintage looked to be a grower’s
year and with excellent agricultural
practices at WFE the grapes were
spectacular. The grapes were harvested
mid to late October and produce wines of
excellence. The grapes were harvested at
night with lights in the vineyard allowing for
cold grapes to arrive at the crusher. Four
people sorted the grapes before entering
the destemmer where all lots were put into
small fermentors to control temperatures
more easily. The wines were allowed to
ferment close to 90 degrees to extract
deep color and cooled to 80 degrees at
12 brix to allow for fruitier components to
be preserved in the wine. The wines went
to dryness and some of the lots were
allowed to have extended maceration to
extract the softer tannins. All the wines
were put into new French oak barrels and
aged for 21 months.
PEDIGREE
The project started in 1975 with the
purchase of 85 acres on Diamond
Mountain, which is southwest of Calistoga,
in The Napa Valley. With the land came an
original stone house, which was built in
1906, and also a lovely old barn built in the
late 1800’s. The Barn was designed by W.H.
Corlett.
The varietal selections are Cabernet (five
clones), Cab Franc, Merlot, and Petit
Verdot. Our plan is to harvest this fruit each
year and keep the best for The Wallis
Family Estate Cabernet. Each year the
